LEMON CHEESECAKE BARS | |
1 c. graham cracker crumbs 1/2 c. finely chopped nuts 2 tbsp. sugar 1/4 c. butter, melted 1 (8 oz.) pkg. cream cheese, softened 1 (14 oz.) can sweetened condensed milk (not evaporated milk) 1/4 c. lemon juice from concentrate 1 egg 1 tsp. vanilla extract Gumdrop flowers, optional Preheat oven to 325 degrees. In medium mixing bowl, combine crumbs, nuts, sugar and butter; mix well. Press firmly on bottom of 12 x 7 inch baking dish. Bake 10 minutes. Meanwhile, in large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk then remaining ingredients except gumdrop flowers. Spread evenly over prepared crust. Bake 20 minutes or until cake springs back when lightly touched near center. Cool. Chill thoroughly. Cut into bars. Garnish with gumdrop flowers if desired. Store covered in refrigerator. Makes 24 bars. |
