BREAKFAST SURPRISE PIE 
1 (9 inch) pie shell, unbaked
4 oz. pkg. Mozzarella, crumbled or sliced thin
6 oz. bulk sausage, cooked, drained, and crumbled
4 eggs, beaten
3/4 c. milk
1/2 tsp. salt
1/2 tsp. pepper

Preheat oven to 375. Line unbaked pie shell with 1/2 cheese, cut into strips. Top cheese with cooked, crumbled sausage. Beat eggs well and add salt and pepper. Pour mixture over ingredients in pie shell. Add rest of cheese.

Bake for 25 to 30 minutes or until knife inserted comes out clean. Serve piping hot.

Serves 6.

Note: May be frozen after baking. Cover well after cooling.
