SURPRISE PIE 
1 1/2 cups sugar
3 eggs
6 tbsp butter, melted
3/4 cup pinto beans, mashed
3/4 tsp vanilla
pecan halves (optional)
unbaked pie crust

Prepare beans in usual manner with regular seasonings and bacon. (Or use left-overs). Mash very well and measure exactly. Mix with sugar, eggs, butter, and vanilla until well blended. Pour into pie crust and bake at 400°F until firm. Garnish with pecans, if desired. Tastes like a pecan pie.
