GERMAN STYLE POTATO PANCAKES 
2 tbsp. flour
3/4 tsp. salt
1/8 tsp. pepper
2 eggs, beaten slightly
2 tbsp. milk
2 tbsp. butter, melted
1/4 c. finely chopped onion
2 c. shredded peeled raw potato
1 tbsp. minced parsley
Hot applesauce or meat gravy or sour cream

Combine first 3 ingredients in mixing bowl.

Add eggs, milk and butter, stir just until smooth.

Stir in onion, potato and parsley

For each pancake, pour 1/4 cup mixture onto hot lightly greased griddle and spread into 4 inch cake.

Brown on underside; turn and brown second side.

Serve with hot applesauce or meat gravy or sour cream.

Yield: about 8 pancakes, 4 servings.
