CHALUPA 
3 lb. pork roast
1 lb. dried pinto beans
2 pods garlic
2 tbsp. chili powder
1 tbsp. cumin seed or powder
1 tsp. oregano
1 sm. can green chili peppers
Salt, to taste

Place all ingredients in a large pot. Cover the roast with water and bring to a boil. Cover and simmer all day. After about 4 hours, lift the roast out of the pot and remove all bone, fat and gristle. Cut the meat in large pieces and return to pot and continue cooking. Serve with the following and let each person fix his own. Chopped tomatoes Grated cheese Hot sauce Chili sauce Chopped lettuce Chopped onions Chopped avocados
