NEW YORK CHEESECAKE 
1 c. flour
1/2 c. sugar
1/2 c. butter
1 egg yolk

Mix, put on bottom of springform pan. Bake at 350 degrees until light brown, then add cheese filling.

CHEESE FILLING:

4 (8 oz.) cream cheese
4 eggs
1 3/4 c. sugar
2 tbsp. flour
1 tsp. vanilla
1 lemon's juice (or 3 tbsp. ReaLemon)
1 pt. sour cream (2 c.)

Beat all ingredients until well blended. Pour in spring pan. Bake at 450 degrees for 10 minutes, then at 325 degrees until top is medium brown (60 minutes plus), turn off oven. Leave cake in for 30 more minutes with door open. Loosen sides, cool 30 minutes more. Remove from pan. Cool at least 3 hours before putting on topping and cutting. Best to make a day before using.

Sour cream
Confectioners' sugar
