SEAFOOD FETTUCINI 
3 lbs. seafood (boiled deveined shrimp, crawfish or crabmeat or any combination of three)
1 lg. onion, chopped
1 lg. green pepper, chopped
2 ribs celery, chopped
1/4 c. fresh parsley, chopped
1 lb. jalapeno Velveeta cheese (or 1/2 lb. of regular or jalapeno)
1 pt. half & half cream
1/4 c. flour
2 sticks butter
Garlic powder to taste
1 (12 oz.) bag med. egg noodles
Parmesan cheese, freshly grated

Saute onions, bell pepper and celery in 2 sticks butter. Add cheese, cream, flour, parsley and garlic powder to mixture. Stir constantly until mixed. Add seafood.

Boil noodles and drain. Add to seafood mixture mixing well. Pour into 4 quart greased rectangle Pyrex baking dish and sprinkle Parmesan cheese over top. Cover and bake at 350 degrees for 25 to 30 minutes. Serves 10 to 12. Freezes well.
