OVEN BARBECUED ROAST BEEF 
3 1/2 to 4 lb. beef roast
1 med. onion, sliced
1 green pepper, cut in rings
1 1/2 c. bottled barbecue sauce
1/2 tsp. ground ginger
1/2 tsp. dry mustard

Trim excess fat from meat. Line a 9 x 13 baking dish with heavy duty aluminum foil to fully cover the roast. Place meat in center of foil. Arrange onions and pepper over the meat. Mix barbecue sauce, ginger and mustard and pour over meat. Bring ends of the foil together and seal well.

Bake in preheated oven at 350 degrees for 3 hours. Do not peek. Serves 6 to 8.
