1 pound dried baby limas - soaked overnight and drained. Cook 1 large ham hock (water covering same at the beginning) until tender. Clean off all meat and cube into broth. Add beans to broth and ham, and add enough water to go 1 inch above beans. Cook until tender, adding more water if necessary.
Add: 1 can tomatoes, cut up with juice included 1/2 c. finely chopped onion 1 c. ketchup 1 c. dark Karo or King syrup 1 1/2 tbsp. prepared mustard 1 tbsp. melted butter 1/8 tsp. Tabasco sauce Salt & pepper
Bring this to a full boil and simmer while oven heats. Pour into roast pan. Add 1/2 pound bacon strips on top. Bake at 350 degrees for 1 1/2 to 2 hours until thick and brown.
