MOCK CHOPPED LIVER (LENTIL
SALAD)
 
1/2 c. lentils
2-3 c. water
3 lg. onions, diced
1/4 c. oil
1-2 hard boiled eggs
Salt, pepper, garlic to taste

Rinse lentils. Cook until soft, but not mushy. Drain. Saute onions in oil until translucent. Process lentils in food processor very quickly (turning on and off once or twice). Add hard boiled eggs and onions and process quickly (turning on and off once or twice). Add seasonings. Mixture should be firm and not too mushy. Remove from processor. Add more seasonings to taste. Add more oil if needed. Place in bowl and refrigerate at least 1 hour before serving.
