FILLING: 1 1/2 c. chopped dates 1 c. sugar 1 c. water 1/2 c. chopped pecans COOKIE: 1 c. butter 2 c. packed brown sugar 1/2 c. sugar 3 eggs 4 1/2 c. all purpose flour 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon Cook over medium heat filling ingredients. Stir constantly until thick, about 8 minutes. Add nuts; cool. Meanwhile cream butter and sugar. Add eggs, 1 at a time. Beat well between each one. Combine dry cookie ingredients: flour, salt, soda, cinnamon; add gradually to creamed butter mixture to make a dough. Divide dough in half, roll into 1/4" thick rectangle pieces, on a lightly floured surface. Spread each with date mixture, roll up jelly roll style. Chill well. Cut 1/2" slices. Bake 12 minutes on greased sheet at 375 degrees. |
