COCONUT-APRICOT BALLS 
1/4 c. Karo syrup
1 egg
1 c. chopped dried apricots
1/2 c. red candied cherries, chopped
2/3 c. chopped pecans
1/2 c. vanilla wafer crumbs
3/4 c. coconut

Mix first 4 ingredients together and cook over low heat, stirring until thick (1 to 2 minutes); remove from heat; stir in nuts and crumbs; cool slightly. Shape into balls using round teaspoonfuls for each; roll in coconut.
