PIZZA MUFFINS 
1 egg
1 c. milk
1/4 c. oil
2 c. flour
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. baking soda
1/2 can tomato paste
1 tsp. oregano
1/2 c. shredded mozzarella
1/4 c. diced pepperoni
1 tbsp. dried minced onion

Heat oven to 400 degrees. Line 12 muffin cups with paper liners. Beat egg; stir in milk and oil. Mix in remaining ingredients just until flour is moistened and cheese and pepperoni is evenly distributed.

Fill cups 2/3 full. Bake 20-25 minutes or until golden. Garnish with additional shredded mozzarella, if desired, while warm. 12 muffins.
