OLD FASHIONED CHICKEN AND DUMPLINGS | |
1 lg. hen 1 1/2 tsp. salt 1 lg. onion, chopped Water to cover DUMPLINGS: 2 c. flour 2 tsp. baking powder 1 tsp. salt 1 egg, beaten 2 tbsp. Crisco Just enough milk to make a soft dough Cut chicken into serving pieces. Place chicken, salt and water to cover in large pot. Cook slowly until tender, add onions and cook 15 minutes. Remove chicken and strain broth. Sift together flour, baking powder and salt. Add egg, Crisco and milk. Roll out on floured board 1/4" thick. Cut into 2"x3" pieces. Add to hot chicken broth and cook 10 to 15 minutes. Add chicken and heat. (Mrs. Rowe's Favorite Recipes.) |
