TABOULI SALAD 
1 c. bulgur wheat, soaked overnight and drained, will expand
1 bunch finely chopped scallions
2 tsp. salt
1/4 tsp. pepper
1 bunch dried mint, chopped
1 lb. ripe tomatoes, diced
1/2 c. fresh lemon juice
1/2 c. olive oil
2 bunches fresh parsley, chopped fine

Mix and serve with pita bread or on Romaine lettuce. Can be prepared a day in advance. Serves 12.
