BAVARIAN BEEF ROLLS WITH NOODLES | |
1 lb. boneless beef round steak 4 tsp. Dijon style mustard 1 slice uncooked bacon, chopped 1/4 c. diced onion 1 med. dill pickle 2 tbsp. low-sodium beef flavor granules 1 c. water 1 c. low-fat plain yogurt 4 c. hot cooked noodles 1 tsp. poppy seed Trim any external fat from beef, cut into 4 servings. Pound meat to 1/4 inch thick, spread one side of each piece with mustard. Combine bacon and onion and divide equally over mustard, quarter pickle lengthwise and place in center of each piece of meat. Tightly roll each piece of meat over filling, secure with toothpicks or tie with string. Place beef rolls in non-stick skillet. Combine flavor granules and water. Pour over meat, cover tightly and simmer for 35 minutes, or until meat is tender. Stir in yogurt. Remove picks or string. Serve beef rolls and sauce over noodles combined with poppy seed. Serves 4. |
