PINEAPPLE GINGER DIP 
2 (8 oz.) pkgs. cream cheese (softened)
1/4 c. plus 1 tbsp. pineapple juice
1 tbsp. lemon juice
1 tbsp. grated orange rind
1 1/2 to 2 tsp. ground ginger
1/4 c. flaked coconut, toasted
2 tbsp. powdered sugar (optional)

Beat cream cheese until light and fluffy. Stir in remaining ingredients. Serve with fresh fruit. Yields 2 cups. This is delicious with fruit.
