SUMMER SALAD WITH BASIL 
1/2 c. balsamic or other red wine vinegar
1/4 c. olive oil
1 tbsp. finely chopped shallots
1 tbsp. Dijon mustard
1/4 c. chopped fresh basil
Pepper to taste
2 tbsp. chopped Italian parsley
8 new potatoes

Cook potatoes until tender. Cool and slice into one inch dice. Combine vinegar, mustard, chopped basil in food processor 15 seconds. With motor running, add oil slowly through hole in cover. Pour this mixture over potatoes. Add pepper and mix well. 15 minutes before serving toss in shallots, parsley, slivered basil. Serve at room temperature.
