BROCCOLI CORNBREAD 
1 (10 oz.) pkg. frozen chopped broccoli
1 pkg. Jiffy corn muffin mix
4 eggs
1 med. onion, chopped fine
1/2 c. sm. curd cottage cheese
1 tsp. salt
1 stick butter, melted

Cook broccoli according to directions on package and drain well. Beat eggs lightly. Add broccoli, corn muffin mix, onion, cottage cheese, salt and melted butter. (Melt butter in baking dish.) Mix well. Bake in a heavy baking dish for 25-30 minutes at 375 degrees.

I made the above recipe without the salt and only 3/4 stick of butter and dried minced onion in place of chopped onion, and it was good!
