FRAN W.'S AMARETTA CHOCOLATE
CHEESE CAKE
 
CRUMB CRUST:

1/4 c. chocolate wafer crumbs
1/4 c. melted butter
2 tbsp. granulated sugar
1/4 tsp. cinnamon or nutmeg

Combine ingredients, press into bottom of 9" spring form pan.

CHEESE FILLING:

1/3 c. sifted flour
Pinch of baking powder
1/4 tsp. salt
3 lg. eggs
3/4 c. granulated sugar
2-4 oz. German or sweet chocolate
3 (3 oz.) pkgs. cream cheese
2 c. heavy whipping cream
1 tsp. vanilla
1 tbsp. confectioners' sugar
1 jigger Amaretta

Sift flour, baking powder and salt. Return to sifter. Melt chocolate in double boiler. Stir occasionally. Remove from heat to cool slightly. Beat eggs in a small bowl until thickened and lemon colored. Beat in sugar 1 teaspoon at a time. Without washing beater, in large mixing bowl beat cream cheese until fluffy; add 1 1/4 cups unwhipped whipping cream and vanilla; beat until smooth and of whipped cream consistency. Add the cooled chocolate and beat gently. With rubber spatula, fold in eggs and sift in flour mixture, folding as you do so. Turn into prepared pan.
