MOM'S CHEESECAKE 
2 (8 oz.) pkgs. cream cheese
3/4 c. sugar
1 1/2 tsp. grated lemon and orange peel or 1 tsp. vanilla, 1/2 tsp. almond
1/4 tsp. vanilla
3 eggs + 1 yolk
2 tbsp. cream

Have cream cheese and eggs at room temperature.

Cream cheese and sugar, lemon and orange. Add one egg at a time. Beat well. Stir in cream and vanilla. Bake at 250 degrees, 1 hour.
