SUGARED PECANS 
1 lb. pecan halves
1 egg white
1 tsp. vanilla or brandy
1/2 c. sugar
1 tsp. cinnamon
1 tsp. salt

Beat egg white and vanilla together in a large bowl. Mix dry ingredients in another large bowl. Coat pecans first in egg mixture. Then stir coated pecans in sugar spice mixture. Spread pecans in buttered shallow pan and bake at 200 degrees for 40 minutes to 1 hour, stirring every 10 minutes.
