SPINACH SALAD 
1 lb. raw spinach, wash in several changes of water and dry well with tea towels
2 hard cooked eggs
1 lg. ripe tomato
1/2 red onion, sliced thin
1 lg. ripe avocado

DRESSING:

2 tbsp. wine vinegar
6 tbsp. salad oil
1/4 tsp. salt
1 clove garlic, finely minced

Combine all ingredients for dressing. Blend thoroughly and chill. Serves 6.
