3 bags wash spinach
Sliced mushrooms
5 slices bacon, crisp and crumbled
3 sliced hard boiled eggs
Sweet onion, sliced thin
2 med. or 1 lg. avocado, sliced
Lemon juice

Remove tough stems and veins from spinach. Drain well and tear into bite size pieces. Layer spinach, sliced mushrooms to cover, bacon, eggs, sweet onion, avocado, and sprinkle of lemon juice over avocado to keep it fresh looking.

DRESSING:

1 tsp. salt
1 tsp. dry mustard
1 tsp. paprika
2 tsp. celery seed
1/2 c. sugar
1/4 c. vinegar
1 c. Wesson oil
1/2 sm. onion, chopped

Put in pint jar; shake well.
