SWEET POTATO NUT MUFFINS 
2 c. sifted plain flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. sugar
1/2 c. milk
1/4 c. butter, melted
1 c. chopped nuts
2 eggs
1 c. mashed sweet potatoes

Sift together flour, soda, baking powder, salt, cinnamon, and nutmeg. Combine sweet potatoes, sugar, milk, and eggs in mixing bowl. Add dry ingredients and butter. Mix until well blended. Stir in nuts. Fill paper muffin cups half full. Bake in 350 degree oven for 25 minutes or until done. Makes 2 dozen muffins.
