SWEET POTATO MUFFINS 
1 1/2 c. flour
1/4 c. light brown sugar
1 tbsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 lg. egg
1/2 c. milk
1 c. cooked mashed sweet potatoes
1/2 c. butter, melted
1/2 c. dark seedless raisins

Heat oven to 400 degrees. Grease 12 muffin cups. In a medium sized bowl combine flour, brown sugar, baking powder, salt, cinnamon, and nutmeg. In a small bowl beat together milk, egg, sweet potato, and butter. Add to dry ingredients. Stir just until dry ingredients are moistened. Stir in raisins. Spoon mixture into muffin cups. Bake 15-20 minutes at 350 degrees or until lightly browned. Serve warm.
