BIRSA'S BEER BATTER FISH | |
1 egg 1 c. self-rising flour Fish fillets 1 (8 oz.) can beer Deep frying fat heated to 360 degrees Mix egg, cup of flour and beer thoroughly, the batter should be thin. Take fillets of fish (must be the freshest possible) wash, dry and salt; flour lightly with same self-rising flour; then dip in the batter quickly, just drop in and out and drop into the Crisco or other oil, which has been heated to approximately 360 degrees. It will take just a few minutes to brown fillets on one side, turn over once and brown again. Remove from frying pan, placing on paper toweling to remove excess grease. While frying remainder of the fillets, those already fried may be kept warm in a moderately heated oven. |
