SWEDISH RICE PUDDING 
3/4 c. rice
5 c. milk (may use skim)
2 eggs
1 c. sugar
1 tsp. vanilla
1 tsp. salt
1 c. whipped cream

Put rice and milk into double boiler. Cook 1 hour until rice is tender. Stir every 10 minutes. Add 2 beaten eggs mixed with 1 cup sugar. Stir until thick. Remove from heat. Add 1 teaspoon vanilla and 1 teaspoon salt. When cool, add 1 cup cream (gourmet whipping) whipped.
