PERSIMMON COOKIES 
1/2 c. shortening
1/2 c. brown sugar
1/2 c. white sugar
1 c. persimmon pulp
1 egg
2 c. flour
1/2 tsp. nutmeg
1/2 tsp. baking soda
1 tsp. cinnamon
1 c. nuts
1 c. raisins
1 tsp. vanilla

Cream together shortening, sugar, persimmon pulp and egg. Sift flour, nutmeg, salt, soda and cinnamon together. Mix with creamed mixture. Add nuts, vanilla and raisins. Use a teaspoon to drop mixture on cookie sheet. Bake at 350 degrees for 10 to 12 minutes or until light brown.
