PERSIMMON COOKIES 
1/2 c. shortening
1/2 c. brown sugar
1/2 c. white sugar
1 c. persimmon pulp
1 egg
2 c. sifted flour
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. nutmeg
1 c. nuts, any kind
1 tsp. vanilla

Cream together shortening, sugar, persimmon pulp and egg. Sift together remaining dry ingredients and add to creamed mixture. Add nuts and vanilla. Drop from teaspoon onto a greased cookie sheet. Bake at 350 degrees for about 20 minutes. Makes approximately 3 dozen cookies.
