PICKLED PEACHES 
4 c. sugar
2 tbsp. stick cinnamon
2 c. vinegar
2 tbsp. whole cloves
Peaches

Select firm, well-ripened peaches. Blanch. Remove skins. Combine sugar, vinegar and spices. Boil 10 minutes. Cook peaches until tender, a few at a time in the boiling syrup. Pack in sterilized jars. Fill jars with boiling syrup.
