RAMEN CABBAGE SALAD | |
1 sm. head cabbage 1 bunch green onions, chopped 1 green pepper, chopped 3-5 stalks celery, chopped 1 pkg. Ramen noodles 1/2 c. toasted slivered almonds 2-3 tbsp. toasted sesame seeds 1 chicken breast, cut up (optional) DRESSING: 4 tbsp. sugar 3/4 c. oil 5 tbsp. vinegar 2 tsp. salt 1 1/2 tsp. pepper Ramen flavoring packet Chop grate or shred cabbage into large bowl. Add green onions, celery and green pepper. Toss. Combine dressing ingredients and pour over cabbage. Toss well. Let sit in refrigerator at least 1 hour. Just before serving, crush Ramen noodles and add to cabbage mixture along with toasted nuts and sesame seeds. Add chicken if desired. Note: To toast nuts, put in pie plate and bake at 250 degrees for 10 minutes or until lightly browned. |
