VEGETABLE MEDLEY IN CHEESE SAUCE | |
2 tsp. butter 1/4 c. onion 1 tbsp. and 1 1/2 tsp. all purpose flour 1 c. skim milk 2 oz. sharp Cheddar cheese (shredded) 1/4 tsp. Worcestershire sauce Salt and pepper to taste 2 c. each of cooked broccoli and sliced carrots 1/2 c. cooked spiral macaroni Heat butter over medium heat until bubbly and hot, add onion and cook about 2 minutes. Add flour and stir until completely combined. Remove pan from heat and stir in milk and return to medium heat and cook. Stirring constantly until mixture is smooth and thickened. Reduce to low heat and add cheese and seasonings; stir constantly until cheese is melted and mixture is thoroughly blended. Add vegetables and macaroni. Stir gently until macaroni and vegetables are thoroughly coated with sauce and heated. Makes 2 servings. |
