BUTTERMILK PIE 
2 c. buttermilk in a double boiler
4 egg yolks
1 c. sugar
1/2 c. cornstarch
1/2 tbsp. vanilla
1 tsp. lemon flavoring

In double boiler, mix buttermilk, 4 egg yolks, sugar and cornstarch. Cook until thickens. Stir in vanilla and lemon flavoring. Set aside to cool. Beat the 4 egg whites until stiff. Sweeten with 1/4 cup sugar. Beat. Fold 1/2 of egg whites into filling. Pour filling into pie crust. Use remainder of egg whites on top. Brown the meringue.
