CHOCOLATE EASTER EGGS 
1/4 lb. butter
2 (1 lb.) boxes 10x sugar
1/2 c. mashed potatoes, plain
1 tsp. vanilla

Blend butter and hot potatoes. Let stand until cool. Add sugar and vanilla. Knead until creamy. Mold into shapes. Chill one hour and dip. Fruits or nuts can be added.

Some recipes can be used to make sweet potato candy. Just add coconut, roll into long strips and cut to desired size. Roll in cinnamon and chill.
