CATHY'S LOWER CHOLESTEROL
MACARONI AND CHEESE
 
1/2 (500 g.) pkg. elbow macaroni, cook
1 c. low-fat yogurt
2 cans (1/2 calorie) cream of mushroom soup
1/2 c. skim milk
1/4 c. chopped pimentos and juice
1/2 c. chopped green pepper
1/2 c. chopped onions
1/2 c. chopped mushrooms
1 tbsp. dry mustard
1 c. low-fat Mozzarella cheese
Black pepper

Cook in microwave before mixing in.

Mix cooked macaroni with remaining ingredients. Cover and bake at 400 degrees for 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
