Stir sugar, peanut butter and egg together in a bowl. This will make a sticky dough mixture. Spoon teaspoonfuls onto cookie sheet, and press criss-cross with fork.

Bake 1 sheet at a time for 8-10 minutes.

Cool 2 minutes before removing from cookie sheet. Sprinkle top with sugar.

This recipe can easily be doubled or tripled.

Makes approximately 20 medium-sized cookies.
