MICROWAVE CHICKEN CASHEW | |
1 lb. boneless chicken breasts 1/2 c. white wine 3 tbsp. soy sauce 1 tbsp. cornstarch 1/2 tsp. instant minced garlic 1/4 tsp. ground ginger 1 med. green bell pepper, cut into chunks 1/2 c. cashew halves Cut chicken into bite-size pieces and place in 2 quart round casserole. Combine wine, soy sauce, cornstarch, garlic and ginger in 1 cup glass measure. Pour over chicken. Cover with wax paper and microwave on high 4 minutes, stirring midway through cooking. Add bell pepper; cover. Microwave on high 3 minutes, stirring midway through cooking. Sprinkle with cashews and let stand 3 minutes. Makes 3-4 servings. Serve with rice or noodles. |
