MEXICAN BREAKFAST 
4 eggs, beaten
1 sm. onion, chopped
1 tbsp. butter or oil
1 tsp. cumin
1 c. Picante sauce
1 tomato, diced
2 c. diced ham or any leftover meat, spam, etc.
2 c. cooked rice
1/2 tsp. garlic salt
Salt and pepper to taste
1 sm. can black olives, chopped (optional)

In skillet, saute' meat with onion until browned in butter or oil. Add eggs and stir until eggs are softly cooked. Add rice and season with cumin, garlic salt and salt and pepper. When rice is heated through, put into serving dish and garnish with diced tomato and black olives.

Serve with side dish of hot Picante sauce. This will serve 2 to 3 people. May add more or less of seasonings of your choice to suit taste. You may pour sauce over top of dish or let each person add their own.
