SPINACH AND COTTAGE CHEESE SALAD 
1 pkg. frozen chopped spinach, drained
1 (3 oz.) pkg. lemon Jello
1 c. hot water
2 tbsp. lemon juice
1 c. cottage cheese
1/2 c. mayonnaise
1 sm. onion, chopped
1/2 c. celery, chopped

Stir Jello in hot water until dissolved. Stir in lemon juice, onion and celery. Add drained spinach. Mix cottage cheese and mayonnaise, stir into mixture. Set in refrigerator until firm as if Jello. Note: Do not cook spinach.
