CARROT CAKE | |
1 1/2 c. vegetable oil 2 c. sugar 4 eggs 2 c. all-purpose flour 2 tsp. baking soda 1 tsp. salt 1 1/2 tsp. cinnamon 1/2 tsp. nutmeg 2 c. grated carrots 1 c. crushed pineapple (1 sm. can, don't drain) 1 c. chopped pecans Mix oil and sugar. Add eggs, 1 at a time and beat. Sift dry ingredients and mix well. Add rest of ingredients. Bake in 3 (9 inch) layers at 350 degrees for 35 minutes. Frost with Cream Cheese Frosting. CREAM CHEESE FROSTING: 1 box confectioners' sugar 1 stick butter 8 oz. cream cheese 1 tbsp. milk 1 tsp. vanilla Cream butter and cream cheese. Add vanilla. Beat in sugar, a little at a time. Add milk and beat until smooth. |
