AUNT POLLY'S CHEWY BUTTERSCOTCH CAKE | |
Beat 4 medium eggs with rotary beater on top of double boiler just until blended. Blend in 2 cups firmly packed brown sugar and 1 teaspoon butter. Place over rapidly boiling water, stirring constantly just until hot, about 5 minutes. Sift Together: 1 1/2 c. flour 1/2 tsp. salt 1 1/2 tsp. double - acting baking powder Add all ingredients at once to cooked mixture; mix well until well blended. Stir in 1 1/2 cups of pecans or other nuts and 1 teaspoon vanilla. Turn into well greased and lightly floured 13 x 9 inch pan. Bake in moderate oven at 350 degrees for 25 to 30 minutes until it springs back when touched lightly in the center with the fingertip. Serve with ice cream or whipped cream or sprinkle ( while warm) with sifted confectioners sugar. |
