IMPERIAL CRAB 
1 lb. jumbo lump crabmeat
1/2 green pepper, chopped
4 oz. jar pimento, chopped
1 lb. butter
1 tbsp. chopped onion
1/3 c. mayonnaise
1/4 tsp. black pepper
1 tbsp. Dijon mustard
1/4 lb. butter
Crushed Ritz crackers or potato chips

Combine crabmeat gently with all ingredients except crackers and butter. Place in baking dish and bake at 350 degrees for 30-40 minutes.

For topping, melt butter and saute crackers, or use potato chips (not sauteed). Add to top of crab mixture about 10 minutes before casserole is ready.

Serves 4-6.
