SPLIT PEA SOUP 
16 oz. pkg. green split peas
3 qts. water
1 sm. ham shank
1 lg. onion, finely chopped
2 chicken bouillon cubes
1 clove garlic (chopped fine)
1/2 tsp. oregano leaves
1/4 tsp. black pepper
1 bay leaf
1 1/2 c. diced carrots
1 c. chopped celery
1 tsp. celery salt
1 tbsp. dried parsley

In large deep pot combine peas, water, ham shank, onion, bouillon cubes and seasonings. Simmer 1 1/2 hours. Remove ham shank, trim meat off bone, cut in small pieces and return to pot. Stir in carrots and celery. Simmer an additional hour or until soup reaches desired thickness.
