CHOCOLATE ZUCCHINI CAKE | |
1/2 c. butter 1/2 c. vegetable oil 1 3/4 c. sugar 2 eggs 1 tsp. vanilla 1/2 c. sour or buttermilk 2 1/2 c. flour 4 or 5 tbsp. cocoa 1/2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. cinnamon 2 c. finely diced zucchini Cream shortening, sugar and oil. Add eggs and vanilla. Add dry ingredients alternately with sour milk. Last, add 2 cups diced zucchini. Bake in 9x13 inch pan at 325 degrees for 40-45 minutes. |
