BLACK BOTTOM CUPCAKES 
8 oz. cream cheese
1 egg
1/3 c. sugar
6 oz. chocolate chips

Blend softened cream cheese with sugar. Add egg and blend well. Fold in chocolate chips.

BATTER: 1 1/2 c. flour
1/3 c. oil
1 c. sugar
1/4 c. cocoa
1/2 tsp. salt
1 tbsp. vinegar
1 c. water
1 tsp. vanilla
1 tsp. baking soda

Combine all ingredients. Blend well.

Fill mini cupcake holders 2/3 full with batter. Drop a teaspoon of filling on top. Bake at 350 degrees for 15 to 18 minutes.
