PORK CURRY | |
1 1/2 lb. lean pork, cut in 1" cubes 1/4 c. flour 1/4 c. butter or oil 1 med. onion 2 c. chicken broth 2 tsp. curry powder 1 1/2 tsp. salt 1/2 tsp. ginger 3 tart apples 1 tbsp. lemon juice Dredge pork cubes in the flour. Brown on all sides in the butter. Add the onion, finely chopped. Stir in the broth, curry, salt and ginger. Cook, covered, over low heat for about 50 minutes. Add 3 tart apples, peeled and diced and lemon juice. Cook covered 10 minutes longer. Serve over 8 ounce noodles (cooked per package directions) or 4 cups cooked rice. |
