SWEET POTATO SOUFFLE | |
3 c. cooked mashed sweet potatoes 1/2 c. sugar 1/2 tsp. salt 1/3 stick butter 1 tsp. vanilla 2 eggs Mix all above with mixer and put in greased baking dish. TOPPING: 1 c. shredded coconut 1 c. brown sugar 1 c. chopped pecans 1/3 stick butter (soft) 1/3 c. self rising flour or 1/3 c. flour, 3/4 tsp. baking powder, and 1/8 tsp. salt Mush above together with your hands. Spread over top of potatoes. Bake, covered, at 300 degrees for approximately 1 hour. Serves 8. |
