HOMEMADE GRANOLA 
1 c. dried fruit or raisins
3/4 c. sliced almonds
1 c. shredded coconut
3 c. old fashioned oats
1/3 c. packed brown sugar
1/4 c. honey
1/4 c. vegetable oil
1 tsp. ground cinnamon
1 1/2 tsp. vanilla

In large bowl (microwave safe), mix honey, oil, brown sugar and cinnamon. Microwave on high 1 1/2 to 2 minutes until boiling. Stir in vanilla. Add oats, coconut, almonds, toss to coat. Microwave on high 6 minutes, stirring twice. Stir in fruit. Let mixture stand about 1 to 2 hours, stirring 2 or 3 times to break up until cool and crisp. 6 cups.

Since microwave ovens vary in power, you may need to adjust your cooking time.

So super easy and tastes delish! Might tweak my next batch maybe pumpkin pie spice in place of cinnamon. And I also added sunflower seeds. Awesome quick recipe - will definitely be making this a lot more.
