CROCK POT BEEF STEW - EASY! 
5 to 7 lb. chuck roast
6 to 8 oz. frozen corn
6 to 8 oz. frozen peas
12 to 16 oz. carrot slices
1 can French cut green beans, drained
1 (29 oz.) can whole/diced canned potatoes
1 (14 oz.) can Del Monte diced tomatoes with basil, garlic and oregano
1 large white onion or 1/2 pkg. pearl onions, finely chopped
1 beef stew seasoning packet
beef bouillon cubes (1 per 1 cup water added)
garlic salt, to taste
pepper, to taste
4 to 6 cups warm water

Slice off excess fat from chuck and cut into bite size pieces. Add all ingredients into Crock-Pot. Add more or less ingredients to size desired. Set Crock-Pot to high and cook until vegetables are tender and meat is cooked through.

Obviously if you cut the recipe by using less meat you would have to use less seasoning. I can't believe there are people out there who do not realize this fact of common sense.

These portions work great but I use beef stew meat and cook on low for 8-10 hours. I also used fresh potatoes and beef broth instead of water and seasoning. If you do this make sure you wait until the last hour of cooking time to add the corn and beans.

The carrot slices I used were flash frozen chips or slices; fresh may also be used. Sorry for any misinformation, I realize reading above that the carrots weren't specified as fresh, frozen or canned. I also agree with Gretchen that if one is reducing the amount of meat used the seasoning should also be reduced.

The flavors were VERY good. I only used a 2lbs. of meat because I was cooking for my husband and I only, and kept the amounts of vegetables the same. I used fresh carrots instead of canned. And found it was a little too salty and beefy. I think if you cut the bouillion down to one cube and a half a pack of the McCormick seasoning packet and change the canned potatoes to fresh it would be perfect!

The beef stew seasoning packet I used was McCormick's Beef stew seasoning which can be found by their other packets.

For a substitute to the beef stew seasoning packet, you can use Lipton Beefy Onion soup mix. I have found it works great.

This recipe turned out great. I'm new to cooking, and didn't find a seasoning packet, but everything was still really good!

Since i was just making it for myself, I only used 1 lb. of meat, and it was just fine with so many vegetables included, too!
